Hydroxypropyl Methylcellulose - Description
VIVAPUR® Hydroxypropyl Methylcellulose (HPMC) is a water-soluble derivative of the natural raw material cellulose. The product is soluble in water and organic solvents, and contributes zero calories to food products. MC can be used to provide aeration, emulsification, thickening, water-binding or for film forming properties. HPMC has thermal gelation properties, meaning it thickens or gels during thermal processing, and reverts back to liquid upon cooling.
