Description

VITACEL® MCG is a water-insoluble compound composed of microcrystalline cellulose (MCC) and carboxymethylcellulose (CMC). Derived from plant fibres, the colloid based fat replacement exhibits a creamy texture and neutral taste. MCG is activated by high shear mixing and once activated is largely unaffected by most processing parameters (heat, acidity, salt, etc.). MCG gels have the unique properties of being shear-reversible and thermo-stable.

Labelled as cellulose gel, cellulose gum (or cellulose gel, xanthan gum for VIVAPUR® MCG 500).
