VITACEL® Potato fibre is an insoluble fibre that is used as a food additive for dietary fibre enrichment, calorie reduction, carbohydrate reduction, and creates less fat absorption during cooking or frying. The main technological property is the construction of a three-dimensional fibre network in the end product, greatly improving the texture and stability of the food, enabling a high water binding capacity in the product. In meat applications, VITACEL® potato fibre improves juiciness due to high water and oil binding properties, and enhances bite and texture.
